If we take a look back at the past, that is of course correct. In the 1950s, the first butchers began to use vacuum packaging to extend the shelf life. By reducing oxygen, we slow down the growth of microorganisms that make meat perishable.

In a first step, the vacuum packaging machine evacuates the air, seals the vacuum bag and then flushes air back into the vacuum chamber. The result is a durable and attractive sales packaging that is also ideally suited as transport packaging. The advantage of the butcher is that he can also let the product mature in the vacuum bag. Meanwhile even in so-called Dry Age bags. The resulting moisture remains in the vacuum packaging and is not lost.
