In restaurants there
often remain already cleaned salad and vegetables which are not
consumed the same day.
A vacuum packaging in bags would only be possible by using a gas
flush. Otherwise this sensible food would be pressed by the vacuum.
A good alternative
is the vacuum packaging in
standardized catering boxes which are put into
the refrigerator after the vacuum process.
If there is
a vacuum packing machine with a big enough vacuum chamber, the box
can be simply put into the machine and the vacuum is produced.
